Full Description:
Named for Domaine Bousquet co-owner Labid al Ameri, this wine is made only in exceptional years from a specific cluster within the estate's highest vineyard. At 1,257m/4,125 ft in Gualtallary, the certified-organic vineyard receives intense daytime sunlight and huge day/night temperature differentials. This results in fruit with increased levels of sugar and acid, flavor, and aromatics.
The grapes are hand harvested early in the morning, and only the heart of parcel N9—which features a sandy stony soil over calcareous material —is used for this wine. Fermentation occurs over 20 days in oak barrels (50% new, 50% used) at a cool 13∘C to maintain its freshness, as no malolactic conversion takes place.
Pairing Suggestions:
Given its bright acidity, freshness, and mineral texture, this wine pairs exceptionally well with light and fresh dishes. Try it with goat cheese, grilled white fish, shellfish, asparagus, or classic spring and summer salads.
